The idea of “Myhealthykiddo” blossomed on Oct-15-2014. It took a year to dream, design and develop the website with base contents. Finally, I published it on Oct-15-2015. There is one more sentiment on this date. It’s my hubby’s birthday. He is the motivational force behind all my positive moves. Lot of courage is required to put an end to a working profession, just to run behind a dreaming passion. He took that courageous decision for me and let me live in my dream world. I totally love cooking, clicking and writing .. Miles to go…
Coming to the post, Kadalai Mittaai is a tasty, crunchy, healthy and easy sweet. If you have roasted peanuts at hand, you shall make this in under 15 mins. A healthy treat to celebrate Myhealthykiddo’s first anniversary 🙂
Peanut Chikki Recipe – Ingredients
Roasted Peanut – 1/2 cup
Jaggery – 1/3 cup
Water – 1/3 cup
Cardamom powder/Aelakkaai thool – a generous pinch
Preparation
1.Add water and cardamom powder to grated jaggery.2.Let it boil till jaggery dissolves well in water. Then filter jaggery for impurities and add it to another pan.
3.Boil well till jaggery syrup thickens. In a bowl of water, pour few drops of syrup. Syrup should stand firm in water. If you take out and roll into a ball, it should roll into a hard ball. If you drop the ball back into water with a force, you should hear a “dong” sound. This is “hard ball” consistency. Switch off the stove immediately.
4.Add roasted peanuts and quickly gather them to a mass using a Spatula(Karandi). Grease chapathi roller and base with ghee.
5.Transfer peanut mass to greased base. Roll it using greased chapathi roller. While rolling, adjust the sides using hand and roll it into a square.
6.Use sharp, ghee-greased knife to cut horizontally and vertically to make small squares.
   Leave it open for half an hour. Then, transfer to air-tight container. That’s it!
Tips/Tricks

- Jaggery syrup consistency decides the crunchiness of the mittaai. If you stop at soft ball consistency, your mittaai would become chewy.
- You shall add cardamom powder after filtering the syrup too.
