Red bell peppers are naturally sweet and bright red in color. Roasting red bell peppers emanate scrumptious flavors that elevate the taste of this sauce. This sauce is homemade, fresh and healthy as it just has real vegetables and hand-picked spices, sans any preservatives or coloring chemicals. The sweetish taste and smooth texture make it a crowd-pleaser. This sauce can be used as a dipping sauce for any kind of fries or as a ketchup for Noodles/Pasta or as a spreading sauce for chapati/roti/dosa. This sauce can also be used as a Pizza sauce.
- Red bell pepper - 1 big
- Small onions/Shallots - 4
- Garlic cloves - 2
- Pepper powder - ¼ to ½ tsp
- Salt - ½ tsp
- Oil - 1 tbsp
- Sugar/Jaggery - 1 tsp
- Raw Cashews - 10 (optional)
- Soak 10 raw, whole cashews in water for 10 to 30 mins. Cashewnuts are optional and you shall skip this step, but this adds quantity, taste and creamy texture to the sauce.
- Halve the whole red bell pepper. Remove the calyx and seeds. Brush the bell peppers with oil.
- Add whole shallots and garlic clove inside bell peppers as shown in above picture.
- Sprinkle salt, pepper powder and few oil drops over garlic and shallots.
- Preheat oven to 400F and place the baking tray in middle rack and bake for 45 mins or until the peppers are wilted and slightly charred in the corners as shown in the above picture.
- If you like barbeque flavor, you shall broil for 2 to 3 mins in the end.
- Take out the tray and let it cool down completely.
- In a mixie jar, first blend soaked cashews(without water) to smooth paste.
- Then add baked stuffs along with 1 tsp sugar or jaggery and grind to smooth paste.
- Transfer to a bowl and serve as a dipping sauce for any fries or ketchup for Noodles/Pasta. You shall spread in dosa or roti as well.
2.You shall optionally add few drops of lemon while grinding the sauce to add tanginess to the sauce.
3.Cashews add creamy texture but dulls the color of the sauce. I haven't added cashews today as I wanted bright red for the pictures. But my kids love the addition of cashews as it yields creamy texture and yummy taste.
4.Keep an eye in the oven after 30 minutes. Timing might vary depending upon the size of the bell pepper used.
I prefer making this sauce while making homemade Pizza as it renders inviting flavors and the bright red color is so catchy. I never buy storebought ketchups/sauces. I always prefer homemade, and this sauce is finger-licking, approved & loved by my kids. Just bake some potato wedges(link) and serve this sauce.
