As promised, here is the post for Kodo Millet/Varagu Ada Pradhaman. The same recipe can be tried in Little Millet(Saamai) too. Make your sweets more nutritious with millets, without compromising the taste.

Kodo Millet/Varagu Ada Pradhaman Recipe – Ingredients
Kodo Millet/Varagu Ada – 3/4 cup
Jaggery – 3/4 cup
Water – 1/4 cup
Thick coconut milk – 3/4 cup
Thin coconut milk – 3/4 cup
Ghee – 1 tbsp
Coconut bits – 1 tbsp
Cashews – 10
Raisins – 15
Cardamom powder – A generous pinch
Preparation
1.Extract thick(first) and thin(second) coconut milk. I used 3/4 cup of coconut pieces to extract the required milk. Refer my Virgin Coconut Oil post to see thick and thin coconut milk extraction.
2.Grate jaggery, add lil water and cardamom powder.3.Once jaggery bubbles well, filter to remove impurities. Pour filtered jaggery syrup in a pan and let it boil for 2 more mins.
4.Simmer to add millet ada. Cook covered in medium flame for 10 mins.
5.First add, thin coconut milk and let it boil for 5 mins.
6.Now, add thick coconut milk and let it boil for just 1 min. Meanwhile, in a separate pan, heat a tbsp of ghee and add coconut bits, cashews & raisins.
7.Fry till coconut bits and cashews turn slightly brown and raisins puff up. Add this to boiling mix and switch off immediately.
Sweet & delicious Millet Ada Pradhaman is ready to relish 🙂 Just slurrrrrrp !!!
Tips/Tricks
- I always add cardamom powder while making jaggery syrup and once the flavor is imparted to the syrup, I just filter out to remove the bits as my kid don’t like to have these bits in her mouth. You shall add it directly to ada pradhaman to lift the flavor.
- I couldn’t get brown colour jaggery here. The one I got was dark yellow and so is the final color. Use brownish jaggery to get traditional color.
- After adding thick coconut milk, switch off in just 1 minute. Do not boil more as the taste will change.
