suvarotti / manneeral / goat spleen fry is tantamount to iron supplement. Highly rich in Iron, it drastically increases haemoglobin levels in blood and kicks out anemia. Goat spleen has both iron and vitamin C and so the iron in it is easily absorbed by the body.
Animal spleen extracts are actually used as medicines. WebMD says that those extracts are given to cancer & HIV patients to boost the immune system. It is also used for treating autoimmune diseases.
Spleen is an organ meat and hence if it’s from a sick animal, there might be concerns of contamination. That’s why pregnant ladies are advised to avoid organ meats.
Buy spleen or any other organ meats from trusted vendors only. I have given goat spleen(from our farm-raised goats) to my kid from 3 years of her age. Give only smaller portions to kids. You can even wait till 5 years, if you have any concerns. Suvarotti is given to feeding moms every week(or once in 10 days) for the first few months.

- Suvarotti / Manneeral / goat spleen - 2 numbers
- Peppercorns/milagu - ½ tsp
- Aniseed/sombu - ¼ tsp
- Cumin/jeera - ¼ tsp
- Oil - 2 tsp
- Cinnamon/pattai - ½ inch
- Curry leaves - few
- Small onions - handful
- Ginger-garlic paste - 1 tsp
- Turmeric powder - ¼ tsp
- Plain chilli powder - ½ tsp
- Rock salt - ½ tsp
- Wash suvarotti once or twice in normal water and then in turmeric powder mixed water.
- Cut out the white stretchy parts and throw away.
- It is your wish to discard or keep the fatty layer. I don't discard them. Wash again in clean water and drain.
- After this, you shall put the cleaned suvarotti in freezer for half an hour to one hour so that there won't be any blood leakage while cutting it. (As I was short of time today, I didn't freeze it). Cut them into desired size(usually lil big).
- In a dry pan, add ½ tsp peppercorns/milagu , ¼ tsp aniseed/sombu, ¼ tsp cumin/jeera. Roast in low flame until slightly color changes and nice aroma wafts. Switch off and cool down.
- Once it cools, grind in mixie as much smooth as possible. Peel and chop a handful of small onions. Wash few curry leaves and keep ready.
- In a pan, in 2 tsp of hot oil, add ½ inch cinnamon/pattai. Then add curry leaves and chopped onions.
- Once onions are slightly browned, add a tsp of ginger-garlic paste and fry for a minute. Then, add cleaned and chopped goat spleen to it.
- Fry for a minute in sim. Then add ¼ tsp turmeric powder , ½ tsp plain chilli powder and ½ tsp rock salt.
- Mix well and cook closed in sim for 10 mins. Open and stir for every 3 mins.
- Add ground powder and stir in sim flame for 5 mins or until you get dry fry.

Tips/Tricks in making suvarotti pepper fry:
- Suvarotti gets cooked quickly in 10-15 mins. You shall add lil(1 or 2 tbsp) water in step 10 before closing the lid to cook. I usually do not add water.
- If you want it to be more spicy, increase chilli powder and peppercorns/milagu.
- Freeze the spleen before cutting to avoid leakages.
