Chocolate Quesadilla

Ingredients
To roll:
  • Chapati/Roti/Tortilla - 5+
For filling:
  • Roasted Peanuts - ¼ cup
  • Roasted Cashewnuts - ¼ cup (see notes)
  • Jaggery - 2 to 3 tbsp
  • Unsweetened cacao powder - 1 heaped tsp
  • Banana - 1
Instructions
  1. Grind peanuts, cashewnuts and jaggery in a small mixie jar. Grind without any bits.
  2. Add cacao powder, chopped banana to the nuts paste and grind all to smooth consistency.
  3. Spread this to half of a chapati/roti/tortilla and fold the other half, as shown in the above picture. You shall cut and serve as such.
  4. Heat a dosa pan, add ghee and heat the folded chapati/roti/tortilla in low-medium heat. Turn to other side and toast until crisp. Serve this warm, else it will harden over time. If sending to school, just stop with step 3. Read below Notes section for more tips.
Notes
1.Use ripened sweet banana.
2.If using big banana, use just ¾th of it. If the mix is hard, you shall add the remaining banana and blend to smooth and spreadable consistency.
3.Increase/decrease jaggery as per the sweetness of banana.
4.Cacao powder is recommended. If unavailable, you shall use cocoa powder.
5.Cashewnuts are optional. If using raw cashews, soak for 10 mins, drain the water and then use the soaked cashews.
6.I used small chapatis and so cut into halves. If using big tortillas, cut into 3 triangles and serve.
