Instapot Matta Rice

Ingredients
  • Matta Rice - 1 cup
  • Water - 5 cups
Instructions
In the night
  1. Soak 1 cup Matta rice for 1 to 2 hours.
  2. Wash well for 3 to 4 times, until the water is clear.
  3. Transfer washed rice to another pot that fits in instapot pan.
  4. Place the instapot pan inside instapot base.
  5. Place the given stand inside instapot pan.
  6. Add water to instapot pan, until the base of the stand immerses.
  7. Add 5 cups water to the rice pan.
  8. Place this rice pan inside instapot pan.
  9. Close the rice pan with a lid.
  10. Close the instapot lid and lock it in right position.
  11. Put on the whistle/pressure regulator and turn it to Sealing position.
  12. In settings, turn on Pressure cook button. Change to High Pressure using Pressure level button.
  13. Set the cooking time using +/- buttons. I usually set to 18 minutes. You shall set to 15 minutes, if you want it lil grainier or to 20 minutes, if you want it to be mushier.
  14. Turn OFF Keep Warm mode.
  15. Press Delay Start button and use +/- buttons to change the timer. First 2 digits are hours and last 2 digits are minutes. Use Delay Start button to switch between hours and minutes.
  16. At 9 PM in the night, I usually set it for 8 hours, so that it starts to cook at 5 AM in the morning. Set the timer and just leave it. Once it starts blinking, the timer is on.
In the morning
  1. Instapot automatically starts once the set timer goes off, in my case at 5 AM. It will take around 1 hour to build the pressure & cook the rice. Once done, it turns off automatically.
  2. It will take 20 more minutes for the pressure to be released, naturally & completely.
  3. Once the silver-colored floating valve comes down, then the pressure is completely released.
  4. Then, turn the pressure regulator from Sealing to Venting position and then take it off.
  5. Open the instapot lid.
  6. Gently take out the rice pan lid using tongs. Watch out for hot steam !
  7. Hold the rice pan using tongs with firm grip and take it out. Perform the doneness check by pressing a rice between the fingers.
  8. Close the rice pan with the lid.
  9. Use metal binder clips to clasp the lid and the vessel tightly. This is optional but it avoids spillage of rice into starch water.
  10. Place an empty vessel and a tumbler inside it.
  11. Slowly and carefully invert the sealed rice pan into the empty vessel and make it to spill the starch out into the empty vessel, standing with the support of the tumbler and the vessel's rim.
  12. Let it strain for 20 - 30 minutes or until the dripping starch water stops, completely.
  13. Take out the rice pan, remove the binder clips and the lid. Fluff it up and serve.
Notes
1.If you forget to add water to the instapot pan, it will alert BURN and turn off.
2.You shall place the rice directly in instapot pan but straining the starch might be challenging.
3.You shall add 4 to 6 cups of water for every 1 cup of rice.
4.Adjust cooking time between 15 and 20 minutes, as per the required consistency.
5.You shall drain the starch inside kitchen sink for more safety.
