Eggless Whole Wheat Banana Cake

Ingredients
Wet Ingredients:
  • Ripened banana - 1
  • Brown sugar - ⅓ cup(mild sweetness) or ½ cup
  • Milk - ¼ cup
  • Oil - ¼ cup(See notes to replace oil with butter)
  • Vanilla extract - 1 tsp
Dry ingredients:
  • Whole wheat flour - 1 cup
  • Baking soda - ½ tsp(levelled)
  • Cinnamon powder - ⅛ tsp
  • Cardamom powder - ⅛ tsp
  • Walnuts - 5 chopped
Instructions
Wet mix:
  1. Take a well-ripened banana, peel the skin and mash well using a fork/potato masher/whisk/hand.
  2. In a bowl, add ½ cup brown sugar, mashed banana and mix well with a whisk.
  3. Add ¼ cup curd/milk (not cold) at room temperature and whisk well.
  4. Add ¼ cup oil (see in tips section) and 1 tsp vanilla extract and whisk well.
  5. Dry mix:
  6. To a sieve, add 1 cup whole wheat flour.
  7. Add ½ tsp baking soda
  8. Add ⅛ tsp cardamom powder
  9. Add ⅛ tsp cinnamon powder
  10. Gently mix all ingredients and then sieve twice
  11. Add 5 chopped walnuts to the sieved mix and mix gently. You shall add chocolate chips too.
  12. Mix & Bake:
  13. First, preheat the oven to 350 degrees Farenheit or 170 degrees Celcius.
  14. Pour the wet mix over the dry mix and use cut & fold method to gently mix the batter. Do not over mix. Just mix until no dry flour is found.
  15. Grease a cake tin or bread tin with coconut oil or butter. You shall add a butter paper in the bottom to avoid over-browned bottom.
  16. Pour the mixed batter into the greased tin.
  17. Bake for 30 to 40 minutes or until a toothpick inserted comes out clean.
  18. Once baked, take out of the oven and leave it outside for 20 mins inside the tin.
  19. Then gently take it out of the tin by inverting the tin over a plate and tapping at the bottom.
  20. Again, invert the cake to normal position and allow it to cool down.
  21. Once completely cooled, add frostings to decorate it to birthday cake or just cut (using serrated knife) & store in air-tight container & enjoy as a snack.
Notes
1.You shall use ⅓ cup sugar for mild sweetness or use ½ cup sugar, if you have a sweet tooth.
2.Use any neutral-smelling oil like corn/rice-bran oil. I use cold-pressed coconut oil (melt & add).
3.You shall replace ¼ cup oil with ¼ cup unsalted butter (room temperature). If using butter, whisk it well with sugar before adding banana. If using butter, increase milk from ¼ cup to ⅓ cup.
4.Cinnamon powder is optional, but cardamom powder gives nice aroma.
5.Any sweet variety of banana can be used but it should be well ripened.
6.If adding chocolate chips, you shall mix some along with walnuts and use some to decorate on top of the cake.
