Serves: 4
To pressure cook:
  • Kollu/horsegram - ¼ cup
  • Water - 1 cup
To temper:
  • Oil - 1 tbsp
  • Mustard seeds/kadugu - ¼ tsp
  • Urad dal/ulutham parupu - ½ tsp
  • Asafoetida/perungayam - a generous pinch
  • Curry leaves - few
For flavor:
  • Sambar powder - ½ tsp
  • Salt - ¼ tsp
To garnish:
  • Grated coconut - ¼ cup
  • Coriander leaves - few
  1. Wash and soak ¼ cup kollu/horsegram overnight. Next day, drain the water and wash it again.
  2. In a pressure cooker, add washed kollu and a cup of water.
  3. Pressure cook for 8-10 whistles in high flame(knob #8). Once pressure is released naturally, use a perforated(with holes) ladle and transfer the sundal to a bowl. You can use the drained water while making rasam.
  4. Add a tbsp of oil(coconut or sesame oil) to a dry pan. Once hot, add ¼ tsp mustard seeds/kadugu. Once spluttered, add ½ tsp urad dal/ulutham parupu. Once very slightly browned, add a generous pinch of asafoetida/perungayam.
  5. Add few washed curry leaves and then the drained kollu sundal. Give a stir and keep the stove in low flame.
  6. Add ½ tsp sambar powder and ¼ tsp salt. Stir well for a minute so that masala and salt are blended well with sundal.
  7. Add ¼ cup grated coconut and just stir well to combine. Switch off the stove.
  8. Add finely chopped coriander leaves and give a quick stir.
1.Do not add salt while pressure cooking kollu sundal as it might not cook properly.
2.You shall use plain chilli powder too. But, sambar powder adds nice flavor to kollu sundal. Click here to view my sambar powder recipe.
